The Vino Cotto of Podere San Biagio is a sweet wine obtained by boiling the must in copper cauldrons. It is caramelized by boiling, raw must is added to start the fermentation and once fermented it is added to the barrel of the previous year. Cooked wine is a traditional wine dating back to the Picene civilization.

Pascaud Villfranche's Sauternes is a wonderful wine obtained from a blend of Semillon, Sauvignon and Muscadelle. Fermentation and aging in oak barriques.
