The Mancha

La Mancha is a DO (denomination of origin) Spanish that occupies most of the provinces of Toledo, Albacete, Cuenca and Ciudad Real in the Autonomous Community of Castile-La Mancha. La Mancha is the largest vineyard in the world with 400,000 hectares of vineyards, and 40% of the entire Spanish production is produced. The best wines of Mancha are produced in Valdeperias, but there are very good wines with a fruity taste in almost the whole denomination. The cultivated vines are the classic Spaniards like Airen, Viura (macabeu), Verdejo, Moscato de wheat menudo, Pedro Ximénez, Parellada, and Torrontés among white grapes and Tempranillo, Moravia, Graciano, and Garnacha for the reds. There are also international grapes such as Cabernet Sauvignon, Merlot, Sirah and Pinot Noir. Among the best wineries we find: Bodegas Ayuso, Bodegas Hermanos Morales, Bodegas Piqueras and Bodega Torres Filoso.

Airén Pampaneo Naturalis a white Spanish wine that comes from white grapes of Airèn, a typical Spanish grape variety, with maceration on the skins for a good 4 months. It has an amber color, given by the long maceration on the skins. On the palate it expresses intense aromas of dehydrated fruit, notes of undergrowth and spice. To the enveloping, energetic, very fresh, mineral sip, with a very long persistence.

Aging: 2 months in terracotta amphorae.
