INTERPRETATIONS OF THE CESANESE, THE WINE OF THE POPE

The Cesanese del Piglio is the only DOCG red wine of Lazio, produced in the municipalities of Piglio, Serrone, Acuto, Anagni, Paliano in the province of Frosinone. This is an area where viticulture dates back to Roman times, and is characterized by hills and mountains, with soils rich in skeleton and limestone. The Cesanese del Piglio is obtained from two autochthonous vines of the ciociaria: the Cesanese d'Affile and the Cesanese Comune, whose origins are unknown, but it seems that the name derives from Cesano, a town near Rome. The Cesanese d'Affile wines with more structured and with an excellent aromatic complexity, as well as the Cesanese Comune from simpler wines. Finally in recent years it has come to the fore and is slowly becoming one of the best Italian red wines.

Collepazzo is a Cesanese di Affile in purity, grapes resulting from the blend of different volcanic and sandstone soils. Spontaneous fermentation without chemical additions and then 10 months of aging in concrete and 6 months in bottle. An artistic and multifaceted wine, in the sense that what might appear low in alcohol and poorly structured, actually has intense fruit and high drinkability but with structure and alcohol present, but absolutely not perceptible. Note of red fruit, wet earth and wild sensations are the masters.
