The Pinot Noir of Les Chais du Vieux Bourg is an elegant and fresh wine obtained from the grapes of the same name that come from the vineyard called Les Vernois which rests on soils composed of calcareous marl from Lias. Manual harvest and, in the cellar we proceed to the destemming and spontaneous vinification with a maceration on the skins for a couple of weeks. It is then aged in oak barrels for 2 or 3 years and is bottled with the addition of a very low percentage of sulphites.
