"Sempre In Due" by Fra I Monti is a white wine aged in amphorae produced from white grapes. The grapes come from a small vineyard of only one hectare with a very low yield, which grows on clayey and loamy soils. The grapes are harvested at the end of September, and in the cellar after destemming are fermented spontaneously in open vats with maceration on the skins for 6 days. After the racking the fermentation in amphora ends without temperature control. The wine is then aged on the lees for 8 months in amphorae.
