Moscato Passito Sol - Ezio Cerruti

Moscato's grapes are allowed to naturally dry in vineyards for 2 months. When the grape harvested the right degree of drying, which depends on the vintage, the grapes are harvested, dirty, pressed and immediately torn. The fermentation is spontaneous with native yeast and wood aging for at least 36 months. Bottled without light or flaming. The Moscato Sol is sweet but never stucco supported by the right degree of acidity. Spices and yellow fruits are sprinkled on the nose. The mouth is tight and mineral and in a very long end. Production of only 5000 bottles.

Service

We recommend tasting the Sol at a temperature of 10/12 ° in sauterners. Wine to drink immediately but will express its best features in a few years.

Pairing

The Moscato Sol is great with sweets, small pastry, to try with a daisy cake.

Cellar: Ezio Cerruti

Ezio Cerrutti manages a small farm stretching over 7 hectares to the confluence between the Langhe and the Monferrato, which is the area most popular for the cultivation of white Moscato, where it produces a great passionate moscato: the Sol. This wine was able To collect the consent of the enthusiasts while fanning modes and compromises. A real "vin de garage" produced in a few thousand bottles and realized by minimizing the interventions between the fi lari and the cellar. The vineyards are at an altitude of about 400 meters with quite significant slopes. The soil is clayey-calcareous with high percentage of active limestone. The density is 5,000 strains per hectare. Vineyards are inert and are only treated with copper and sulfur avoiding any systemic product intervention. In some special vintages, when climate allows, Ezio produces a few hundred bottles of Sol Botrytis, a selection of grapes bound by the noble mold.
