The Gerbais Cellar is located in Celles-sur-Ource, the municipality of Côte des Bars, the southernmost of the 5 sub-regions of Champagne bordering the Chablis region. The Gerbais are vineyards for three generations, and currently the winery is managed by Pascal Gerbais who with his passion has managed to give a new qualitative boost to the company starting from 1996 to convert all the vineyards into organic. Pascal cultivates about 14 hectares of vineyards in Chardonnay, Pinot Noir and Pinot Bianco that grow on calcareous-clay soils. Vinify, as used in the best tradition in Burgundy, the grapes separately to keep the characteristics of each single vineyard. Pascal designs 5 cuveè among which stand out "The Original" from pure Pinot Bainco grapes that come from vineyards planted in the early twentieth century. All Gerbais champagne agitate at least 36 months on the yeast before they break out. Not just bubbles in the Gerbais house but also a red wine based on Pinot Noir Black of the name Coteaux Champenois.
