Jauma is the project of James Erskine, a former sommelier who after traveling the world for his work (Japan, England and Germany) decided to return to Australia to study enology and start producing his own wine. Only a visit to the cellar would be worth the trip alone: a beautiful structure of 1867 throughout built in sandstone. The team is completed by Fiona Wood, an expert in natural viticulture, with which James works shoulder to shoulder in the vineyard. The naturally bred vineyards are mainly planted in Shiraz and a small part of Grenache. All wines are made without the addition of selected yeasts, whole cluster macerations, without filtrations, and aging in barriques. Two wines are produced: Tikka The Cosmic Cat based on Shiraz and Grenache, and Audrey Clarendon made from pure Shiraz grapes.
