The adventure of The Smiths began in 2000 when Susanna Grassi creates the company I Fabbri. The return to the old property, so empty but still a staggering beauty rekindles in Susanna's will take those values and love for the land that had always accompanied his family. With the desire to produce wines and quality, bottled under their own brand, so I Fabbri have found a new life and new management "in pink" .L'azienda you are in the territory of Casole, in the district of Chianti Lamole - Greve in Chianti, is a large sun drenched gorge that is characterized by an elevation difference that oscillates between 450 and 650 meters above sea level. The soil is mostly sandy: they are loose soils, resulting from a thousand-year disintegration of sandstone rocks, little compact and very permeable, poor in terms of organic substances. The philosophy of The Smiths is to preserve natural resources and enhance the peculiarities of the territory. Typicality and tradition go hand in hand with more and less impactful techniques in the vineyard and in the cellar, a view of natural wines that are a charming and genuine story of Chianti Classico. The vineyards of The Smiths are located at altitudes from 550 to 650 meters above sea level. The exposure of the vineyards is south, south / west: this allows the plants and grapes to enjoy during the day the heat of the sun, the heat that is also accumulated by dry stone walls and released gradually during the night, helping the maturation of the grapes. Vineyards with its own exhibition, several parcels of land, plant now more than forty years old or younger vines: After harvesting by hand, the grapes are processed separately, in order to preserve intact the organoleptic characteristics and the distinctive features. From the highest vineyards are born Lamole Chianti Classico and Chianti Classico Olinto, in addition to pure Merlot Doccio; from the lower ones, however, wines with more structure, such as Chianti Classico Riserva and Great Selection. The farm is organic since 2003, with certification Q cert. The biological conversion was a natural process, without force, with the aim of ensuring greater respect for the environment and the consumer. I Fabbri has chosen to adopt sustainable agriculture, socially and ecologically correct.
