The winery of Emil Tavcar is located in Dutovlje, a small village in the center of Kras, in Italian Carso, a region shared between Italy and Slovenia. Here we talk about heroic viticulture in fact, the karst rock leaves little room to the earth, and to cultivate the vine you have to bring the land, taking it from the Dolines, the karst depressions that are formed in the ground due to the collapse of a subterranean cave. It is not surprising that Kras gave its name to the karst topography because in some places the soil layer is so shallow that the vines grow practically from the stone. The family of Emil has always lived in these areas even though, before it was a butcher's shop. And 'Emil, which in 1996 bottles for the first time the wine that is produced from grapes that come from the 2 hectares of old vineyards planted in Malvasija, Vitovska, Terrano. Work in the vineyard excludes the presence of any chemical, and only provides for the use of small amounts of copper and sulfur. The vinifications are made with only indigenous yeasts, the must ferments in wooden vats with short macerations of a few days, and for the refinements it is foreseen the use only of oak barrels. The wines of Emil Tavcar reveal a tension out of the ordinary and are rocky just like him.
