DO.T.E.

DO.T.E. is the project of Filippo Calabresi, former owner of Tenimenti d'Alessandro, a company that together with Stefano Amerighi, represents the birth of the name and of all that happened in the following years with Syrah in Italy. DO.T.E means Down to Earth, a return to the earth, where the term "Down" indicates an ideal movement to get close to touching the earth. In the 37 hectares of vineyards of the Tenimenti d'Alessandro, Filippo managed to carve out a terraced plot of about 2 hectares from which to produce wines capable of spontaneously recounting their raison d'etre, beyond production protocols and specifications . The grapes are grown without any use of chemical substances, and the vinifications are carried out in total absence of chemical and oenological products, including sulphites. Red wines refine in cement tanks to have wines that are savory, fun, aromatic and crunchy, or in tired and terracotta woods, for more traditional experiments in order to pursue more austere, meticulous, reasoned results, while the whites make maceration on the skins for 7-15 days, and refine about 18 months in glass demijohns and / or old barriques, before being bottled with the old autumn or spring moons. Each bottle of DO.T.E. is the resulting intention of a path to itself determined, any differences are to be considered parallel deviations that proceed in the same direction of the path taken.
