The company of Claudio Plessi is located in Castelnuovo Rangone, in the province of Modena, a land of choice for the production of Lambrusco. The Plessi family has owned the Molinazza farm since 1813, where it produced cereals and fodder for livestock, and raised the vine using the Modenese method of planting, for the production of Lambrusco and white wine. In the sixties with the mechanization has gone from animal traction to the mowing machine and the planted Modena has been replaced by the vineyard in Belussi. Claudio since he was a child, he always worked in the cellar with his father, also because he was the only one who managed to get into the wooden barrels for cleaning. They made a sparkling red wine but above all they were the only ones who used the Trebbiano di Spagna to make the "Torbianein". Claudio is a man who wants to tell his land, his traditions and keeps alive a series of local autochthonous varieties such as Trebbiano Modenese, the Lambrusco di Fiorano, the Grape Tasca, the Caveriol, the Trebbiano di Spagna and the Rust. In 2000 he decided to quit his job as a teacher and to devote himself full time to viticulture. Today the vineyard that grows covers about 3.2 hectares and in the cellar all its wines ferment spontaneously with only indigenous yeasts and the SO2 used is very low. During wine making, no oenological or chemical additives or additives are used. How not to underline its sensitivity towards a sustainable production for the environment even at the expense of quantity, in fact it produces only 5,000 bottles.
