Chateau Lestignac covers an area of ​​7.5 hectares cultivated according to the principles of biodynamics. There priority is given to the vines and to the development of each particle, exploiting the forces of nature to their advantage and gradually removing the obstacles and difficulties deriving from the last thirty years of agronomic confusion. Every year, Mathias and Camille, have decided to implement the use of animals for soil tillage; in general, the delicacy of cultivation methods go hand in hand with vision a long-term nature. The wines produced in Lestignac are all characterized by a vinification without interventions. Their philosophy is to touch the wines as little as possible: they leave all the components of the fermentation free to express themselves and try to act as much as possible on the vineyard (this is where wine is made, like state). Finally, they give time to the wine, they give it the opportunity to express itself independently for the time necessary, between 18 and 48 months for most cuveés, for some even much more. The cuvées "Outside the walls" were born in 2018, after the freeze of 2017 which burned 90% of the production. So Mathias and Camille Marquet have decided to start a company made up of vignerons like them, everyone neighbors.
