The cellar of Charles Dufour is located in Landreville, in the Côtes des Bars region of the Aube department. Coming from a family immersed in wine tradition, he began working in the mid-2000s, and soon realized that the traditionalist approach of family domaine was not enough for him and decided to aim for organic and sustainable agriculture. Its vineyards are located on the territory of the municipalities of Landreville, Essoyes and Celles-sur-Ource.Cinque and are grown using only copper, sulfur, herbal teas and preparations of the biodynamic type. In 2010 the bio certification (Écocert) arrives and in concomitance it releases its own production line, under the double brand "Champagne Charles Dufour" and "Champagne Bulles de Comptoir" (the latter already used in previous years as an experimental) . Charles in the cellar prefers to work with natural yeasts for the fermentation of his wines, does not use filtration or clarification of the sparkling bases, and the aging takes place in barriques on the fine lees, while after the disgorgement does not take any dosage with liqueur d'expédition. Charles has a soft spot for the Pinot Blanc that is found significantly in the Bulles de Comptoir line. Recently he produced a pure champagne of Pionot Bianco, the "Le Champs du Clos".
