Champagne Clandestin

Clandestin is a joint project born from the minds of Bertrand Gautherot of Vouette & Sorbée and the young and energetic Burgundian winemaker Benoit Dousset, with the aim of producing a champagne from the Aube terroir. The grapes used come only from biodynamic vineyards and are subject to the same high standards for which Vouette & Sorbée is known. The vines must be at least 20 years old and the sun exposure must be the same. Due to the unconditional quality claim, only ripe and perfect grapes of the highest quality are processed. The vineyards are located above Buxières and are planted with Pinot Noir and Chardonnay vines. In the cellar the harvested grapes are processed with the utmost respect with soft pressing and fermentation with natural yeasts. Depending on the quantity and maturity, each parcel is vinified separately. The wines are stored in 500 l French oak barrels before the second fermentation. They are aged for 15 months on the lees before disgorging.
