Aci Urbajs (one reads Azi) cultivates its only hectare of vineyard on Mount Rifnik, which dominates the town of Šentjur. Demeter certified since 1999 is strongly biodynamic. His motto is: "Wine did not start with us and should not end with us". This reflects the work done in the vineyard and in the cellar and is aimed at respecting the land and its plants (vines and vegetable garden) to the maximum. The soil is marly. Over the years, thanks to biodynamic viticulture, a consistent layer of humus has been added, which now reaches over 30 cm thick. The wines are all macerated, some more, others less, depending on the vintage. Usually the maceration is about 3 weeks. Autochthonous yeasts, maturation of at least 1 year in large Slovenian oak barrels. The wines of Aci Urbajs are chameleon-like like its creator, the basic blend is Chardonnay, Kkerner, Reisling Italico and Riesling Renano, but based on how the year goes, see what to do .... It can make 3/4 years all of the same blend and then 2 years only pinot grigio ... all based on how the year goes, the moon, his mood ...
